Stock’s Perfect Pizza
Dough
2 Tbl Yeast
1 Cup warm water
4 tsp sugar
Let this sit for a
few minutes and froth and foam (approx 10-15 min)
Add ½ tsp salt.
Approx 2 cups
flour
Knead dough 2-5
minutes. Place cloth over dough and let
sit and rise approx 15 minutes. Cut in
half and roll out on floured surface.
Spray with Pam or lightly grease and then sprinkle with a little corn
meal. Let dough rise in pans for 10-12
minutes before adding sauce, cheese and toppings.
Sauce (enough for 2+ pizzas)
12 oz can tomato
paste
8 oz can tomato
sauce
4-6 oz water
(clean out cans)
1 ½ T sugar
½ tsp basil
½ tsp Italian
seasoning
½ tsp oregano
1-2 garlic cloves
crushed and chopped
1/8 tsp onion salt
1 tsp beef
bouillon (or 1 cube)
Cook in pan on low
heat for ½ - 1 hour. As the sauce cooks,
if thickens add a little water.
Preheat oven to
425. Pour half of sauce over crust. Grate approx 1 lb provolone cheese per
pizza. Add cheese & favorite
toppings over sauce. After adding
toppings sprinkle approx ¼ c Parmesan cheese over pizza. Place in hot oven and cook approx 12-15
minutes. Let cool about 4-5 minutes, cut
and serve
