Bean Dip
1 lb ground beef
1 large onion, chopped
Salt & Pepper
1 cup refried beans
1 (4 oz) can diced chilies
3 cups jack and/or cheddar cheese
3/4 cup red taco sauce
1 small can sliced olives
Green Onions
Avocado Dip (guacamole)
Sour Cream
Corn Chips
Brown the ground beef and the onions together, season with salt & pepper. Layer in this order on an oven-safe dish (I use a large round one. Double this recipe for a large sheet cake pan):
Refried Beans
Ground Beef & Onion Mixture
Chilies
Cheese
Red Taco Sauce
Bake, uncovered at 400 degrees for 20-25 minutes. Garnish with olives, green onions, guacamole and sour cream. Line sides of pan with corn chips. Serve hot with remaining corn chips.
It's also fun to use blue and red chips for the Fourth of July!
