Roasted Asparagus
2 pounds asparagus (green and/or white)1 T extra-virgin olive oil
Coarse salt and Fresh ground pepper, to taste
Preheat oven to 400 degrees. Place asparagus on a rimmed baking sheet in one layer. Pour olive oil on asparagus and stir to coat. Season with salt and pepper. Roast just until tender, about 12-15 minutes. Serve immediately
