Julie Bleak's Caesar Salad
from Tami McArthur2 bunches romaine lettuce, washed and dried
1 garlic bulb
1/2 cup oil
2 T Worcestershire sauce
1/2 tsp salt
Pepper to taste
1/2 tsp dry mustard
1 lemon (can use bottled lemon juice, but a fresh lemon is better!)
1 cup Parmesan cheese (use fresh or pre-grated cheese...not the canned kind!)
Croutons (see recipe below)
Rub wood bowl (or any BIG bowl you have) with bulb of garlic- let it stay in bowl if desired. Mix oil, Worcestershire sauce, salt, pepper, and dry mustard in the bottom of bowl. Tear romaine lettuce into bowl and toss with dressing. Squeeze lemon over salad and toss. Add Parmesan cheese and croutons. Serve immediately.
Coutons:
4 or 5 slices white bread
butter to spread
garlic powder (or garlic salt)
Butter all sides of bread and sprinkle with garlic powder or garlic salt-- just don't use too much! Stack bread and cut into cubes. Spread in bottom of baking dish. Bake at 400 degrees until croutons are golden brown.
